Pancake Batter
  • 1.5 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1.25 cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • to taste green food coloring (optional) For festive color
Decorations
  • 1 cup fresh berries (strawberries, blueberries, raspberries) For ornaments
  • 2 medium sliced bananas For the trunk
  • 1 cup mini chocolate chips For fun decoration

Method
 

Prepare the Pancake Batter
  1. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract together.
  3. Combine the wet and dry ingredients gently, taking care not to overmix.
  4. If desired, add a few drops of green food coloring to the batter.
Cook the Pancakes
  1. Heat a nonstick griddle or frying pan over medium heat, lightly greased with butter or cooking spray.
  2. Pour petite circles of batter onto the griddle, forming three circles of differing sizes for the Christmas tree.
  3. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
Stack the Pancakes
  1. Stack the circles from largest to smallest to create the Christmas tree shape, offsetting each slightly.
Decorate the Tree
  1. Use sliced bananas as the trunk, arrange fresh berries as ornaments, and sprinkle mini chocolate chips.
  2. Dust the entire creation with powdered sugar for a snowy effect.
