Preparation
- Gather a large saucepan and stir together 2 cups of sugar, 1 ⅓ cups of applesauce, two packages of strawberry jello, and two envelopes of unflavored gelatin. Allow the mixture to stand for one minute.
- Over medium heat, bring the mixture to a boil, stirring constantly. Once it reaches a rolling boil, continue for one minute before pouring it into a greased 11x7 or 9x13 pan.
- Repeat the process using another 2 cups of sugar, 1 ⅓ cups of applesauce, two envelopes of unflavored gelatin, and lime jello.
- Once poured into the pan, place the pans in the fridge and let them set for three hours.
- After firming up, take a metal spatula and cut the gumdrops into squares. Transfer them onto wax or parchment paper.
- Use mini Christmas cookie cutters to shape the gumdrops into festive figures and lay them out on a lined tray to dry at room temperature for at least 8 hours or overnight.
- Once dried, coat each gumdrop in the remaining 1 cup of sugar before serving.
Notes
Allow your unflavored gelatin to bloom properly by letting it sit in the mixture for a minute before heating. Use silicone molds for easy removal and character.
