  • 2 packages (3 ounces each) strawberry jello The vibrant red color and fruity punch evoke holiday cheer.
  • 2 packages (3 ounces each) lime jello This bright green gel adds a zingy twist that perfectly balances the sweetness.
  • 4 envelopes unflavored gelatin (divided) Essential for that perfect chewy texture of the gumdrops.

Method
 

Preparation
  1. Gather a large saucepan and stir together 2 cups of sugar, 1 ⅓ cups of applesauce, two packages of strawberry jello, and two envelopes of unflavored gelatin. Allow the mixture to stand for one minute.
  2. Over medium heat, bring the mixture to a boil, stirring constantly. Once it reaches a rolling boil, continue for one minute before pouring it into a greased 11x7 or 9x13 pan.
  3. Repeat the process using another 2 cups of sugar, 1 ⅓ cups of applesauce, two envelopes of unflavored gelatin, and lime jello.
  4. Once poured into the pan, place the pans in the fridge and let them set for three hours.
  5. After firming up, take a metal spatula and cut the gumdrops into squares. Transfer them onto wax or parchment paper.
  6. Use mini Christmas cookie cutters to shape the gumdrops into festive figures and lay them out on a lined tray to dry at room temperature for at least 8 hours or overnight.
  7. Once dried, coat each gumdrop in the remaining 1 cup of sugar before serving.

Notes

Allow your unflavored gelatin to bloom properly by letting it sit in the mixture for a minute before heating. Use silicone molds for easy removal and character.
