Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until thoroughly combined.
- In another bowl, mix together the vegetable oil, eggs, vanilla extract, buttermilk, and peppermint extract.
- Pour the wet ingredients into the bowl of dry ingredients and stir gently until just combined.
- Fold in the mini chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.
Icing
- For the icing, mix the powdered sugar with milk until it reaches a drizzling consistency.
- Once cooled, drizzle the icing over the bread and sprinkle with crushed peppermint candies.
Notes
To keep your bread fresh, slice and freeze. Reheat in the microwave for 10-15 seconds for a warm treat. Consider using low-sugar options or whole grain flour for healthier alternatives.
