Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and mint extract, mixing until fully incorporated.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and a pinch of salt.
  5. Gradually combine the dry ingredients into the wet mixture, mixing until just blended.
  6. Fold in the chocolate chips until evenly distributed throughout the dough.
Baking
  1. Using a tablespoon, scoop portions of dough onto the prepared baking sheets, spacing them two inches apart.
  2. Bake for 10-12 minutes, until the edges are set but the centers are soft and gooey.
  3. Allow cooling on a wire rack before serving.

Notes

For chewier cookies, reduce flour slightly or add an extra egg yolk. Store leftover cookies in an airtight container at room temperature for up to a week.
