Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and mint extract, mixing until fully incorporated.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and a pinch of salt.
- Gradually combine the dry ingredients into the wet mixture, mixing until just blended.
- Fold in the chocolate chips until evenly distributed throughout the dough.
Baking
- Using a tablespoon, scoop portions of dough onto the prepared baking sheets, spacing them two inches apart.
- Bake for 10-12 minutes, until the edges are set but the centers are soft and gooey.
- Allow cooling on a wire rack before serving.
Notes
For chewier cookies, reduce flour slightly or add an extra egg yolk. Store leftover cookies in an airtight container at room temperature for up to a week.
