Preparation
- Preheat your oven to 350°F.
- Grease and flour two 8.5 x 4.5 x 2.5 inch loaf pans.
- In a mixer or large bowl, combine pumpkin, eggs, oil, water, vanilla, and sugar; mix until blended.
- In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
- Stir the dry ingredients into the pumpkin mixture until just blended.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared pans.
Baking
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
Notes
Enhance with a scoop of vanilla ice cream or a smear of cream cheese frosting. Great for Thanksgiving or Halloween gatherings.
