Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Grease and flour two 8.5 x 4.5 x 2.5 inch loaf pans.
  3. In a mixer or large bowl, combine pumpkin, eggs, oil, water, vanilla, and sugar; mix until blended.
  4. In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  5. Stir the dry ingredients into the pumpkin mixture until just blended.
  6. Gently fold in the chocolate chips.
  7. Pour the batter into the prepared pans.
Baking
  1. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
