Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cooked rice, shredded chicken, enchilada sauce, black beans, corn, diced onions, garlic powder, cumin, salt, and pepper.
  3. Stir until all ingredients are well mixed to ensure every bite is packed with flavor.
  4. Transfer the mixture to a greased 9×13 inch baking dish, spreading it out evenly.
  5. Sprinkle the shredded cheese evenly over the top.
Baking
  1. Bake in the preheated oven for 20-25 minutes, until heated through and the cheese is melted and bubbly.
  2. Remove from the oven and let cool slightly before serving.
  3. Garnish with chopped cilantro if desired.

Notes

To make this dish even easier, consider using rotisserie chicken. For a bit of heat, add diced jalapeños or red pepper flakes.
