For the bread

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Generously season the chicken breasts with salt and pepper.
  3. Heat 3 tablespoons of extra virgin olive oil in a skillet over medium heat. Sear the chicken for about 5 minutes per side, until golden brown and cooked through.
  4. In a mixing bowl, combine diced tomatoes, chopped basil, minced garlic, and balsamic vinegar. Mix and let sit for 5-10 minutes.
  5. Slice your French baguette or ciabatta, brush each side with olive oil, place them on a baking sheet, and toast them in the oven.
Assembly
  1. Once the chicken is cooked, slice it into medallions. Layer the toasted bread with slices of chicken and top with the tomato-basil mixture.
  2. Serve warm and enjoy!

Notes

Use ripe tomatoes for sweetness and fresh basil for the best flavor. Allow the tomato mixture to rest for enhanced flavors and toast the bread just before serving for optimal crunch.
