Preparation
  1. Wash fresh cherries under cold water, and pit them carefully.
  2. In a medium saucepan over medium heat, combine pitted cherries, sugar, and water.
Cooking
  1. Stir occasionally as the mixture heats until cherries soften and release their juices.
  2. Mix cornstarch with 2 tablespoons of water to create a smooth slurry.
  3. Gradually pour the cornstarch slurry into the bubbling cherry mixture while stirring continuously for 3-5 minutes until it thickens.
  4. Remove from heat and stir in lemon juice to awaken flavors.
