Preparation
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually blend this mixture into the butter mixture.
- Gently fold in the chopped maraschino cherries and chocolate chips.
- Drop rounded spoonfuls of dough onto the prepared baking sheets, spaced apart.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden and centers are still soft.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Notes
Store cookies in an airtight container to maintain their chewy texture. Can be frozen for up to three months. To enjoy, thaw at room temperature and warm in the oven.
