  • 1/2 cup frozen cherries Sweet and vibrant
  • 1/2 cup dairy-free milk Almond, coconut, or oat milk recommended
  • 2 teaspoons maple syrup Natural sweetener
  • 1/8 teaspoon almond extract Enhances cherry flavor
  • 3 tablespoons whole chia seeds Creates the pudding texture

Method
 

Preparation
  1. Blend the frozen cherries, dairy-free milk, maple syrup, and almond extract in a blender until smooth.
  2. Transfer the cherry mixture to a jar or bowl and stir in the chia seeds until evenly distributed.
  3. Let the mixture sit for about 10 minutes for the chia seeds to absorb moisture.
  4. Stir the mixture again to break up any clumps of chia seeds.
  5. Cover and refrigerate overnight or for at least several hours until thickened.
  6. Before serving, stir the pudding again, taste, and adjust sweetness with more maple syrup if desired.

Notes

For added creaminess, blend the cherries and milk longer. Customize flavors with cinnamon or vanilla; top with fresh fruits or granola.
