  • 8 oz Asparagus Chopped
  • 1 cup Grape Tomatoes Halved
  • 1 cup Shredded Carrots For color and crunch
  • 1 pinch Red Pepper Flakes Optional for heat
  • 1 tbsp Olive Oil For sautéing
  • to taste Salt and Pepper To enhance flavors
  • 1 tbsp Fresh Basil Chopped for garnish

Method
 

Preparation
  1. Cook the cheese tortellini according to package directions.
  2. In a mixing bowl, combine Italian dressing, balsamic vinegar, honey, and red pepper flakes.
Cooking
  1. Sauté sliced chicken breasts in olive oil, seasoned with salt and pepper, until golden brown.
  2. Glaze the chicken with some dressing and simmer.
  3. In the same pan, cook asparagus and shredded carrots.
  4. Combine the cooked vegetables, grape tomatoes, tortellini, and chicken in a large bowl.
  5. Pour the remaining dressing over the salad and toss gently.
  6. Garnish with fresh basil before serving.
