Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil, ranch seasoning mix, salt, and pepper until thoroughly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
Roasting
  1. Roast in the preheated oven for 25-30 minutes, turning them halfway through.
  2. Remove the potatoes from the oven and sprinkle with shredded cheddar cheese.
  3. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Serving
  1. Garnish with chopped parsley before serving.
