Preparation
- Preheat your oven to 375°F and move the rack to the middle position.
- Season both sides of each piece of chicken with garlic powder and salt & pepper.
- Add the olive oil to a skillet over medium-high heat. Sear the chicken for about 5 minutes on each side until golden.
- Transfer the seared chicken to a greased baking dish.
- Pour the marinara sauce over the chicken, spreading it evenly.
- Sprinkle freshly grated parmesan cheese over the chicken, followed by shredded mozzarella cheese.
Baking
- Bake the dish, uncovered, for 20 minutes. If using smaller chicken breasts, reduce the time to about 15 minutes.
- Broil the chicken for a few minutes until the mozzarella is lightly browned and bubbling.
- Let the chicken rest for 5 minutes before serving.
Notes
For healthier alternatives, consider low-sugar marinara sauce or dairy-free mozzarella. This dish pairs well with a fresh salad or roasted vegetables.
