- In a bowl, combine the shredded chicken with chipotle sauce, smoked paprika, garlic powder, cumin, salt, and black pepper. Stir until the chicken is evenly coated.
- Heat olive oil in a pan over medium heat, add the seasoned chicken, and sauté for about 3-4 minutes until warm and fragrant.
Assembly
- Lay the tortillas on a clean surface. Spread sour cream evenly over each tortilla.
- Sprinkle the shredded cheddar and Monterey Jack cheeses on top. Add the warm, seasoned chicken in the center.
- Top everything with diced avocado, fresh tomatoes, red onion, and a sprinkle of fresh cilantro.
Cooking
- Fold the sides of the tortilla inward and carefully roll it tightly towards the end.
- Heat up a skillet or grill pan over medium heat. Melt butter in the pan and place the wraps seam-side down. Grill for about 2-3 minutes per side until the wraps are golden brown and crispy.
Serving
- Once grilled to perfection, remove the wraps from the heat. Cut them in half and serve immediately with extra chipotle sauce or sour cream for dipping.
