Method
 

Preparation
  1. In a bowl, combine the shredded chicken with chipotle sauce, smoked paprika, garlic powder, cumin, salt, and black pepper. Stir until the chicken is evenly coated.
  2. Heat olive oil in a pan over medium heat, add the seasoned chicken, and sauté for about 3-4 minutes until warm and fragrant.
Assembly
  1. Lay the tortillas on a clean surface. Spread sour cream evenly over each tortilla.
  2. Sprinkle the shredded cheddar and Monterey Jack cheeses on top. Add the warm, seasoned chicken in the center.
  3. Top everything with diced avocado, fresh tomatoes, red onion, and a sprinkle of fresh cilantro.
Cooking
  1. Fold the sides of the tortilla inward and carefully roll it tightly towards the end.
  2. Heat up a skillet or grill pan over medium heat. Melt butter in the pan and place the wraps seam-side down. Grill for about 2-3 minutes per side until the wraps are golden brown and crispy.
Serving
  1. Once grilled to perfection, remove the wraps from the heat. Cut them in half and serve immediately with extra chipotle sauce or sour cream for dipping.
