Preparation
- Start by preparing the cauliflower, cutting the head into small, even florets for consistent cooking.
- Steam or boil the cauliflower florets until tender, about 8 to 10 minutes.
- Drain the cauliflower thoroughly and let it cool slightly, squeezing out as much liquid as possible with a clean kitchen towel.
- Transfer the drained cauliflower to a large mixing bowl and mash it using a fork or potato masher.
- Add the eggs to the mashed cauliflower to help bind the mixture.
- Incorporate the shredded cheddar and Parmesan cheeses into the mixture.
- Mix in the breadcrumbs, chopped green onions, minced garlic, salt, and black pepper until well combined.
- Form the mixture into small patties, ensuring they are a comfortable size to eat.
Cooking
- Heat a few tablespoons of vegetable oil in a nonstick skillet over medium heat.
- Carefully add the patties to the hot oil and cook for 3 to 4 minutes on each side until golden brown and crispy.
- Transfer the cooked patties to a paper towel-lined plate to drain excess oil.
Notes
You can prepare the cauliflower mixture a day in advance and refrigerate until ready to fry. For a healthier option, bake patties at 400°F (200°C) for about 20 minutes, flipping halfway through. Experiment with different types of cheese or add spices to enhance flavor.
