  • 1 medium head cauliflower, cut into florets
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 2 medium green onions, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Start by preparing the cauliflower, cutting the head into small, even florets for consistent cooking.
  2. Steam or boil the cauliflower florets until tender, about 8 to 10 minutes.
  3. Drain the cauliflower thoroughly and let it cool slightly, squeezing out as much liquid as possible with a clean kitchen towel.
  4. Transfer the drained cauliflower to a large mixing bowl and mash it using a fork or potato masher.
  5. Add the eggs to the mashed cauliflower to help bind the mixture.
  6. Incorporate the shredded cheddar and Parmesan cheeses into the mixture.
  7. Mix in the breadcrumbs, chopped green onions, minced garlic, salt, and black pepper until well combined.
  8. Form the mixture into small patties, ensuring they are a comfortable size to eat.
Cooking
  1. Heat a few tablespoons of vegetable oil in a nonstick skillet over medium heat.
  2. Carefully add the patties to the hot oil and cook for 3 to 4 minutes on each side until golden brown and crispy.
  3. Transfer the cooked patties to a paper towel-lined plate to drain excess oil.

Notes

You can prepare the cauliflower mixture a day in advance and refrigerate until ready to fry. For a healthier option, bake patties at 400°F (200°C) for about 20 minutes, flipping halfway through. Experiment with different types of cheese or add spices to enhance flavor.
