  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 1 no Yellow Onion, diced
  • 500 g Fresh Broccoli, chopped into florets
  • 4 cloves Garlic, minced
  • 2 cups Heavy Cream
  • 8 oz Mozzarella Cheese, shredded
  • 8 oz Parmesan Cheese, grated
  • 1/2 cup Pasta water, reserved
  • 16 oz Ditalini Pasta

Method
 

Preparation
  1. Melt the butter and olive oil in a large skillet over medium heat.
  2. Add the minced garlic and diced onion, sautéing until translucent (about 5 to 7 minutes). Season with 1 teaspoon of salt.
  3. Stir in the chopped broccoli and sauté for another 5 minutes. Season with another teaspoon of salt.
  4. Pour in the heavy cream and bring to a gentle simmer. Add the shredded mozzarella cheese, stirring until melted and smooth. Adjust seasoning with salt and pepper.
  5. Cook the ditalini pasta in a separate pot according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  6. Add the cooked pasta to the skillet with the broccoli and creamy sauce. Pour in the reserved pasta water and toss until coated.
  7. Remove from heat, sprinkle grated parmesan cheese over the pasta, and stir until it melts.
  8. Serve immediately, garnished with additional parmesan cheese and freshly ground black pepper if desired.

Notes

For added flavor, consider adding a pinch of red pepper flakes when sautéing the onion and garlic. This recipe is versatile; feel free to include proteins like chicken or shrimp or use whole grain pasta for a healthier option.
