Prepare the Crepe Batter
- In a medium-sized bowl, whisk together the flour, salt, and sugar until well combined.
- In a separate bowl, whisk together the milk and eggs, then gradually add this to the dry ingredients, whisking gently until smooth.
- Stir in the melted butter until well combined.
- Cover and let the batter rest in the refrigerator for at least 30 minutes.
Cook the Crepes
- Heat a lightly greased skillet over medium heat.
- Pour about 1/4 cup of batter into the center of the pan and swirl to coat the bottom.
- Cook the crepe for about 1-2 minutes until the edges lift and the bottom is lightly golden.
- Flip the crepe and cook for another 30-60 seconds until golden on the other side.
- Transfer cooked crepes to a plate and stack them to keep warm. Repeat with the remaining batter.
Prepare the Filling
- In a large bowl, combine the farmer cheese and softened cream cheese.
- Mix in the sugar and another egg until well combined.
- Add vanilla extract and lemon zest, mixing until smooth.
Assemble the Blintzes
- Place a crepe on a flat surface and spoon about 2-3 tablespoons of the cheese filling into the center.
- Fold the sides over the filling and tuck the top and bottom to create a package.
- Repeat with the remaining crepes and filling.
Cook the Blintzes
- In a skillet, heat a tablespoon of butter over medium heat.
- Place the blintzes seam-side down in the skillet, cooking for 3-4 minutes per side until golden.
- Serve warm with your favorite toppings like sour cream, fruit preserves, or powdered sugar.
