Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease two 9-inch round baking pans with butter or cooking spray.
  2. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until well combined.
  3. Create a well in the center of the dry ingredients and add the vegetable oil, eggs, and grated carrots. Stir together until just combined; be careful not to over-mix.
  4. If you’d like to add some texture, gently fold in the chopped walnuts or pecans.
Baking
  1. Divide the batter evenly between the prepared pans, smoothing the tops if necessary.
  2. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
Frosting
