For the Tart
  • 1 sheet puff pastry (thawed) Flaky and buttery base
  • 3 medium Bosc pears (sliced) Soft, juicy, and slightly sweet
  • 4 oz Gorgonzola cheese (crumbled) Creamy with a hint of sharpness
  • 1/2 cup brown sugar Rich and aromatic for caramelization
  • 3 tbsp unsalted butter Rich flavor addition
  • 2 tsp fresh thyme leaves Earthy and fragrant
  • 2 tbsp balsamic glaze (for drizzling) Adds a polished finish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a parchment-lined baking sheet.
  3. In a skillet, melt the unsalted butter over medium heat, then add the sliced Bosc pears and brown sugar, simmering for 8-10 minutes until caramelized.
  4. Once the pears are caramelized, sprinkle crumbled Gorgonzola and fresh thyme leaves over the mixture. Cook for another 2 minutes.
  5. Spoon the pear mixture onto the center of the pastry, leaving an inch around the edges, and gently fold the edges inward.
  6. Bake the tart in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
  7. Remove from the oven and drizzle with balsamic glaze before serving.
