Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line an 8-inch square baking pan with parchment paper.
Crust Creation
  1. Combine the flour, brown sugar, and melted butter in a medium bowl until it resembles wet sand. Press into the bottom of the pan.
  2. Bake in the preheated oven for 10 minutes and let cool slightly.
Cheesecake Layer
  1. Beat the softened cream cheese and granulated sugar together until smooth and creamy.
  2. Add the egg and vanilla extract, mixing until fully combined. Spread evenly over the cooled crust.
Apple Layer
  1. Toss the diced apples with cinnamon and granulated sugar until coated. Scatter evenly over the cheesecake layer.
Streusel Topping
  1. Mix the brown sugar, flour, oats, and softened butter in a bowl until crumbly. Evenly sprinkle over the apples.
Bake
  1. Bake for 30–35 minutes until the topping is golden and the center is set.

Notes

For best results, soften cream cheese beforehand. Allow bars to cool completely before slicing for clean edges. Optional: Serve with whipped cream and a sprinkle of cinnamon.
