For the Avocado Lime Crema

Method
 

Prepare the Salmon
  1. Pat the salmon fillets dry with paper towels. In a mixing bowl, combine Cajun seasoning, olive oil, lemon juice, garlic powder, smoked paprika, salt, and black pepper. Rub this mixture over the salmon fillets and marinate for 15-30 minutes.
Cook the Salmon
  1. Heat a skillet over medium-high heat. Add olive oil and place the salmon skin-side down, cooking for 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 3-4 minutes until cooked through; the internal temperature should reach 145°F.
  2. Alternatively, bake at 400°F for 12-15 minutes, grill for 4-5 minutes on each side, or air fry at 400°F for 8-10 minutes.
Make the Avocado Lime Crema
  1. In a food processor, combine avocados, sour cream or yogurt, lime juice, cilantro, minced garlic, and salt. Blend until smooth, adding water as needed to achieve desired consistency. Chill for 30 minutes.
Assemble the Dish
  1. Serve by creating a base of cooked rice on a plate, adding black beans and topping with seared salmon. Drizzle the crema over the salmon or serve it on the side. Garnish with corn, onions, tomatoes, and lime wedges. Optionally, wrap in tortillas with lettuce.

Notes

For deeper flavors, marinate the salmon for up to an hour. Adjust the crema thickness by varying water amounts. Consider adding jalapeños or extra avocado for more flavor.
