Preparation
  1. Shuck the corn and cut each ear into thirds. Remove all corn silks and pat each piece dry with a paper towel.
Cooking
  1. In a large pot or deep fryer, heat oil to 350°F.
  2. In a small bowl, mix the Cajun seasoning, garlic powder, and salt. Set this blend aside.
  3. Carefully lower the corn pieces into the hot oil and fry for 4–5 minutes until golden and crispy.
  4. Remove the corn pieces and place them on a paper towel-lined tray to drain any excess oil.
  5. While the corn is still hot, toss it with melted butter and the Cajun spice mix until evenly coated.
Garnishing
  1. Garnish with freshly chopped parsley if desired. Serve warm alongside ranch dressing or spicy mayo for dipping.

Notes

Don’t overcrowd the pot while frying; monitor oil temperature closely for best results.
