Preparation
- Shuck the corn and cut each ear into thirds. Remove all corn silks and pat each piece dry with a paper towel.
Cooking
- In a large pot or deep fryer, heat oil to 350°F.
- In a small bowl, mix the Cajun seasoning, garlic powder, and salt. Set this blend aside.
- Carefully lower the corn pieces into the hot oil and fry for 4–5 minutes until golden and crispy.
- Remove the corn pieces and place them on a paper towel-lined tray to drain any excess oil.
- While the corn is still hot, toss it with melted butter and the Cajun spice mix until evenly coated.
Garnishing
- Garnish with freshly chopped parsley if desired. Serve warm alongside ranch dressing or spicy mayo for dipping.
Notes
Don’t overcrowd the pot while frying; monitor oil temperature closely for best results.
