Ingredients
  

For the Chicken

For the Burrito Filling
  • 1 can black beans, drained and rinsed Adds fiber and a hearty texture.

For Assembling the Burritos
  • 4 large flour tortillas Soft and pliable for rolling.
  • 3.5 ounces shredded cheddar or Monterey Jack cheese Melty goodness to bind the filling.
  • 1 large ripe avocado, sliced For creamy texture.
  • 3.5 ounces shredded lettuce Adds a refreshing crunch.

Method
 

Preparation
  1. In a mixing bowl, combine the chicken, olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well and allow it to marinate for at least 10 minutes.
Cooking the Chicken
  1. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, flipping halfway, until browned and cooked through.
  2. Transfer the chicken to a plate and let it rest.
Sautéing Vegetables
  1. In the same skillet, add a drizzle of olive oil if necessary. Sauté the red onion and garlic for about 2 minutes until fragrant and translucent.
  2. Add the diced red bell pepper, ground cumin, and chili powder, cooking for another 3-4 minutes.
Adding Black Beans and Assembling
  1. Stir in the drained black beans and season with salt and pepper. Cook for an additional 2-3 minutes.
  2. Warm the tortillas in a skillet or microwave until pliable.
  3. On each tortilla, layer the black bean mixture, sliced chicken, cheese, avocado, lettuce, tomatoes, and sour cream.
Serving
  1. Roll up each tortilla tightly and slice in half if desired. Serve with lime wedges.

Notes

Marinate chicken longer for deeper flavor. Customize with additional veggies or spice levels according to preference.
