Pasta and Filling
  • 20-25 pieces jumbo pasta shells (cooked al dente) These large shells will hold the delicious filling.
  • 2 cups shredded chicken (rotisserie or cooked breast) Using pre-cooked chicken makes this dish easier.
  • 1 cup Buffalo sauce Use your favorite variety for the signature spicy kick.
  • 1 cup ricotta cheese Can substitute with cottage cheese for a lighter option.
  • 1 cup shredded mozzarella cheese, divided The gooey melted mozzarella topping brings everything together.
  • 1/2 cup shredded cheddar cheese Enhances flavor and cheesiness.
  • 1/4 cup blue cheese crumbles Optional but highly recommended for richness.
  • 2 pieces green onions, diced Adds a fresh bite to the dish.
  • 1 tablespoon garlic powder Enhances the overall flavor.
  • 1 tablespoon onion powder Complements the garlic flavor.
  • 1/4 teaspoon black pepper Rounds out the flavors.
  • 1/4 cup freshly chopped parsley For garnish.
  • 1 cup blue cheese or ranch dressing For drizzling on top.
  • 1 tablespoon extra chopped parsley For additional garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil water and cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a large mixing bowl, combine shredded chicken, buffalo sauce, ricotta cheese, half of the mozzarella, cheddar cheese, garlic powder, onion powder, and black pepper. Mix well.
  4. Stuff each pasta shell with the buffalo chicken mixture and place in a greased baking dish, opening side up.
Baking
  1. Top the stuffed shells with the remaining mozzarella and optionally sprinkle with blue cheese.
  2. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.

Notes

You can prepare the filling a day in advance and stuff the shells right before baking. For a milder dish, reduce buffalo sauce or replace it with a milder sauce. Use whole-grain pasta shells for healthier options.
