Ingredients
  

For the bruschetta
  • 1 loaf French baguette or Italian ciabatta loaf, sliced into 1/2 inch thick slices (about 12 slices)
  • 2 cups ripe tomatoes, diced (preferably heirloom or Roma)
  • 2 cloves fresh garlic, minced
  • 1/4 cup fresh basil leaves, finely chopped
  • 1/4 cup extra virgin olive oil (plus more for brushing)
  • 1/2 teaspoon sea salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 tablespoon balsamic glaze (plus more for drizzling)
  • optional grated Parmesan cheese for topping (Creamy and nutty)

Method
 

Preparation
  1. Preheat your grill to medium heat. If using a grill pan, heat it on medium heat on your stovetop.
  2. In a medium mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, sea salt, black pepper, and balsamic glaze. Gently stir until well mixed and allow to marinate for at least 15-20 minutes.
  3. Brush both sides of the bread slices with extra virgin olive oil.
Grilling
  1. Place the bread slices on the preheated grill. Grill each side for about 2-4 minutes or until golden brown with charred grill marks.
  2. Remove the grilled bread and allow it to cool slightly.
Serving
  1. Generously top each grilled slice of bread with the marinated tomato mixture.
  2. If desired, sprinkle with grated Parmesan cheese.
  3. Drizzle with additional balsamic glaze before serving.
  4. Serve immediately while warm.

Notes

Ensure that you use fresh and ripe ingredients for the best taste. Do not skip marination time for the tomato mixture.
