Main Ingredients
  • 1 large tortilla Flour tortillas hold up better, but corn works if preferred.
  • 2 large eggs Scrambled.
  • 1 cup cheese Your favorite melting cheese, such as cheddar or Monterey Jack.
Optional Add-ins
  • 1 tablespoon chopped herbs Optional, for added flavor.
  • 1/4 cup leftover veggies Use what you have on hand.
  • 2 slices cooked bacon If desired for additional protein.

Method
 

Preparation
  1. Warm the tortilla on a pan over medium heat for about 1 minute until it is flexible.
  2. In a bowl, crack the eggs and whisk them with a fork until scrambled.
  3. Slide the scrambled eggs onto the warm tortilla.
  4. Scatter the cheese generously over the eggs.
  5. Fold the tortilla in half, or add another tortilla on top to make a double quesadilla.
Cooking
  1. Cook the quesadilla for about 2–3 minutes on each side or until golden brown, flipping carefully.
  2. Allow it to cool slightly before slicing into triangles.

Notes

Serve with fresh salsa, avocado, or a drizzle of honey if desired. Avoid overfilling the quesadilla to prevent it from bursting when flipped.
