Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the cream cheese, sugar, lemon juice, and lemon zest until smooth.
- Roll out the puff pastry on a floured surface and cut into rectangles of about 4x6 inches.
- Place a spoonful of the cream cheese mixture in the center of each rectangle and top with blueberries.
- Fold the corners of the pastry over the filling to form a pocket.
- Brush the tops with egg wash.
Baking
- Bake for 20-25 minutes or until golden brown.
- Allow to cool slightly, then dust with powdered sugar before serving.
Notes
Let the cream cheese come to room temperature for easier mixing. Consider adding a sprinkle of cinnamon or vanilla extract to the filling for extra flavor. For easier handling, use light flour on your work surface if the puff pastry is sticky.
