Preparation
- In a small saucepan over medium heat, combine the blueberries and sugar. Cook for about 5-7 minutes, stirring occasionally. Use the back of a spoon to gently mash the berries until they form a thick, jammy consistency. Remove from heat and allow it to cool slightly.
- Spread cream cheese or brie generously on one side of each slice of bread. On two of the slices, layer the shredded mozzarella cheese over the cream cheese, then spoon the blueberry mixture evenly on top. Place the remaining slices on top, cream cheese side facing down, forming two sandwiches.
Cooking
- Heat a large skillet or griddle over medium-low heat. Generously butter the outside of each sandwich for richness and to promote browning.
- Place the sandwiches in the pan and cook for 3-4 minutes per side. Use a spatula to gently press down, ensuring that the bread crisps up nicely and the cheese melts thoroughly.
Finishing
- Once cooked to a beautiful golden brown, remove the sandwiches from heat and let them rest for 1-2 minutes. Slice diagonally and sprinkle with flaky sea salt before serving immediately.
- For an extra indulgent touch, consider drizzling with honey or balsamic glaze before serving, or adding fresh basil leaves inside the sandwich.
Notes
For best results, use fresh blueberries for flavor and texture. If short on time, frozen blueberries work well if thawed. Consider mixing in lemon zest for added flavor. Ensure to let the sandwiches cool slightly post-cooking to prevent excessive cheese run-off.
