  1. In a small saucepan over medium heat, combine the blueberries and sugar. Cook for about 5-7 minutes, stirring occasionally. Use the back of a spoon to gently mash the berries until they form a thick, jammy consistency. Remove from heat and allow it to cool slightly.
  2. Spread cream cheese or brie generously on one side of each slice of bread. On two of the slices, layer the shredded mozzarella cheese over the cream cheese, then spoon the blueberry mixture evenly on top. Place the remaining slices on top, cream cheese side facing down, forming two sandwiches.
Cooking
  1. Heat a large skillet or griddle over medium-low heat. Generously butter the outside of each sandwich for richness and to promote browning.
