Irresistibly sweet and buttery, these Blueberry Crumble Bars are easy to make and perfect when that sweet tooth calls. Enjoy them warm with ice cream or as a breakfast treat.

Ingredients
  

For the Crumble Base
  • 2 cups all-purpose flour Regular old flour
  • 1 cup sugar Regular sugar
  • 1/2 cup cold butter Use real butter, not margarine
  • 1 cup old fashioned oats Quick oats are not recommended
  • 1 teaspoon baking powder For leavening
  • 1/2 teaspoon salt
For the Blueberry Filling
  • 2 cups fresh or frozen blueberries No need to thaw if using frozen
  • 1 tablespoon lemon juice Enhances flavor
  • 1 tablespoon cornstarch For thickening the fruit layer
  • 1 tablespoon sugar To mix with blueberries

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan with butter or cooking spray.
  2. In a mixing bowl, combine flour, sugar, salt, baking powder, and oats.
  3. Cut in cold butter until the mixture resembles beach sand.
  4. Press half of the crumble mixture evenly into the bottom of the greased pan.
Blueberry Layer
  1. In another bowl, toss the blueberries with lemon juice, cornstarch, and sugar.
  2. Spread the blueberry mixture evenly over the pressed crumble base.
  3. Top with the remaining crumble mixture, sprinkling it evenly over the blueberries.
Baking
  1. Place the pan in the oven and bake for 35 to 40 minutes or until the top is golden brown.
  2. Allow to cool before slicing into bars.

Notes

Serve warm with vanilla ice cream for an extra special treat. If you have leftovers, store them in an airtight container for up to 5 days.
