- Stir in the oat flour, baking powder, cinnamon, and salt until everything is combined; don’t overmix!
- Gently fold in the blueberries and any optional ingredients like chopped nuts or chia seeds.
- Pour the batter into the prepared baking dish and smooth it out evenly.
Baking
- Bake for 30 to 35 minutes, or until the center is set and slightly golden on top.
- Let it cool for 5 to 10 minutes before slicing. Serve warm with additional honey, yogurt, or fresh fruit.
Notes
For added moisture, consider using Greek yogurt instead of cottage cheese. For a crispy topping, sprinkle some oats on top before baking. This bake can be stored in an airtight container for up to 4 days.
