Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cottage cheese, eggs, oats, honey, vanilla extract, cinnamon, and salt. Stir until well-blended.
- Gently fold in the blueberries, taking care not to crush them.
- Grease a baking dish (about 9x13 inches) and pour the batter into it, spreading it evenly.
Baking
- Bake for 35-40 minutes until golden brown and set in the center.
- Allow to cool for 5-10 minutes before serving.
Notes
Use room temperature ingredients for a more homogenous batter. You can substitute cottage cheese to make it dairy-free. This bake freezes well, making it a perfect meal prep option.
