  • 3 very ripe bananas Mashed thoroughly
  • 1/4 cup honey For adding sweetness
  • 1 cup milk Any variety, dairy or non-dairy
Add-ins
  • 1 cup fresh or frozen blueberries For a juicy burst

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the bananas thoroughly.
  3. Add honey and milk to the mashed bananas and stir until well combined.
  4. Gradually fold in the rolled oats until they are coated.
  5. Gently fold in the blueberries, ensuring to not crush them.
  6. Prepare a muffin tin by spraying it lightly with non-stick spray or lining with muffin liners.
  7. Fill each cup evenly with the mixture, being careful not to overfill.
Baking
  1. Place the muffin tin in the preheated oven and bake for 20-25 minutes or until lightly browned.
Cooling
  1. Allow the cups to cool slightly in the pan before transferring them to a cooling rack.

Notes

Consider adding cinnamon, nuts, or chocolate chips for variations. Store in an airtight container for up to three days at room temperature or freeze for longer storage.
