Preparation
- Preheat your oven to 180°C (350°F). If you’re using an electric non-fan-forced oven, increase the temperature to 200°C (390°F).
- Drizzle 1 tablespoon of honey on each sheet of puff pastry and spread it evenly.
- Divide the walnuts, blue cheese, and Parmesan cheese evenly on each pastry. Sprinkle with fresh thyme leaves, and season with sea salt and cracked pepper.
- Roll up each sheet of pastry tightly. Cut each roll in half lengthways and tuck the ends to secure the filling.
- On a piece of baking paper, twist each length into a round coil, making sure to maintain the filling inside.
- Brush the coils with milk.
Baking
- Bake for 25-30 minutes or until golden-brown and puffed.
- Garnish with extra thyme leaves before serving warm.
Notes
For a personal twist, mix in dried fruits like cranberries or spices like crushed red pepper flakes. Store in an airtight container for up to 3 days and reheat in the oven. For variety, swap blue cheese for goat cheese or feta.
