Method
 

Preparation
  1. Preheat your oven to 180°C (350°F). If you’re using an electric non-fan-forced oven, increase the temperature to 200°C (390°F).
  2. Drizzle 1 tablespoon of honey on each sheet of puff pastry and spread it evenly.
  3. Divide the walnuts, blue cheese, and Parmesan cheese evenly on each pastry. Sprinkle with fresh thyme leaves, and season with sea salt and cracked pepper.
  4. Roll up each sheet of pastry tightly. Cut each roll in half lengthways and tuck the ends to secure the filling.
  5. On a piece of baking paper, twist each length into a round coil, making sure to maintain the filling inside.
  6. Brush the coils with milk.
Baking
  1. Bake for 25-30 minutes or until golden-brown and puffed.
  2. Garnish with extra thyme leaves before serving warm.

Notes

For a personal twist, mix in dried fruits like cranberries or spices like crushed red pepper flakes. Store in an airtight container for up to 3 days and reheat in the oven. For variety, swap blue cheese for goat cheese or feta.
