Ingredients
  

For the salmon
  • 4 fillets Salmon fillets Fresh, high-quality
  • 2 tbsp Olive oil Extra virgin
  • 1 tbsp Lemon juice Freshly squeezed
  • 2 tbsp Blackened seasoning
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • to taste Salt and pepper Essential for flavor
For the filling
  • 2 cups Cooked chopped spinach Nutrient-packed
  • 8 oz Heavy whipped cream For richness
  • 1 cup Parmesan cheese Grated
  • 2 cloves Garlic Minced
  • 1 tbsp Butter For sautéing
  • 8 oz Shrimp Optional
For the fettuccine
  • 8 oz Fettuccine noodles Cooked
  • 1 cup Alfredo sauce Creamy and decadent
  • 1 tbsp Melted butter For sauce
  • 1 tbsp Extra lemon juice For drizzle

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rub the salmon fillets with olive oil and season with blackened seasoning, chili powder, paprika, garlic powder, salt, and pepper. Squeeze fresh lemon juice over the fillets.
  3. In a large skillet, heat olive oil over medium-high heat and sear the salmon for 2-3 minutes on each side until golden brown. Transfer the fillets to a baking dish.
Filling
  1. Melt butter in another skillet over medium heat and sauté minced garlic until fragrant.
  2. Add cooked chopped spinach and optional shrimp, stirring until combined.
  3. Gradually mix in heavy whipped cream and grated Parmesan cheese, stirring until creamy. Stuff the salmon fillets with this mixture.
Baking
  1. Bake stuffed salmon in the preheated oven for about 10-12 minutes until cooked through and flaky.
Fettuccine
  1. Melt butter in a saucepan over medium heat and add remaining minced garlic.
  2. Pour in Alfredo sauce and let it simmer. Toss in cooked fettuccine noodles, mixing thoroughly.
Serving
  1. Plate the creamy fettuccine Alfredo and place a stuffed salmon fillet on top. Drizzle with extra lemon juice and garnish.

Notes

Marinate salmon for 30 minutes for better flavor. Customize filling with other vegetables if desired. Leftovers can be stored in an airtight container for up to 2 days.
