  • 0.5 cups granulated sugar Sweetens the crust just enough for a delectable base.
  • 0.25 teaspoons salt Enhances the sweetness by balancing flavors beautifully.
  • 0.75 cups unsalted butter, chilled and cubed Adds a creamy richness that makes the crust irresistible.
For the filling
  • 2 cups fresh blackberries Juicy and vibrant, they are the star of this recipe.
  • 0.25 cups honey A natural sweetener that complements the tartness of the blackberries.
  • 1 tablespoon lemon juice Brightens the flavors and adds a refreshing zing.
  • 1 tablespoon cornstarch Helps thicken the blackberry filling, ensuring the perfect texture.
For the topping
  • 0.5 cups shelled pistachios, roughly chopped Offers a crunchy contrast and nutty flavor.
  • 1 teaspoon vanilla extract Elevates the overall flavor profile for a warm, comforting taste.
  • 0.25 teaspoons almond extract Optional: Adds a delightful hint of nuttiness, enhancing the pistachio.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper for easy removal later.
  2. In a medium bowl, mix together the flour, sugar, and salt. Incorporate the chilled butter cubes and blend until the mixture resembles coarse crumbs, similar to sand.
  3. Press the mixture into the bottom of the prepared baking dish, spreading it evenly across the base. Bake for 15 minutes or until lightly golden.
Cooking
  1. In a small saucepan, combine the blackberries, honey, lemon juice, and cornstarch. Cook over medium heat, stirring occasionally, until the mixture thickens and bubbles.
  2. Pour the blackberry mixture over the baked crust and ensure it’s spread evenly for a consistent flavor in every bite.
  3. Sprinkle the chopped pistachios over the blackberry layer and press them slightly into the mixture, creating a delightful texture juxtaposition.
  4. Return to the oven and bake for an additional 15-20 minutes until the pistachios are toasted and the filling is gently bubbling.
  5. Let the bars cool completely in the dish before lifting out using the parchment overhang. Once cooled, cut them into squares and serve!

Notes

Consider adding a touch of cinnamon to the crust for a warm, spiced aroma. For a chocolate twist, drizzle melted dark chocolate over the top once cooled. Fold in oats into the crust mixture for added texture.
