Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper for easy removal later.
- In a medium bowl, mix together the flour, sugar, and salt. Incorporate the chilled butter cubes and blend until the mixture resembles coarse crumbs, similar to sand.
- Press the mixture into the bottom of the prepared baking dish, spreading it evenly across the base. Bake for 15 minutes or until lightly golden.
Cooking
- In a small saucepan, combine the blackberries, honey, lemon juice, and cornstarch. Cook over medium heat, stirring occasionally, until the mixture thickens and bubbles.
- Pour the blackberry mixture over the baked crust and ensure it’s spread evenly for a consistent flavor in every bite.
- Sprinkle the chopped pistachios over the blackberry layer and press them slightly into the mixture, creating a delightful texture juxtaposition.
- Return to the oven and bake for an additional 15-20 minutes until the pistachios are toasted and the filling is gently bubbling.
- Let the bars cool completely in the dish before lifting out using the parchment overhang. Once cooled, cut them into squares and serve!
Notes
Consider adding a touch of cinnamon to the crust for a warm, spiced aroma. For a chocolate twist, drizzle melted dark chocolate over the top once cooled. Fold in oats into the crust mixture for added texture.
