Prepare Your Jam
- In a medium saucepan over medium heat, combine fresh blackberries, water, lemon juice, and granulated sugar. Stir occasionally, allowing the mixture to cook for about 20-30 minutes until it thickens. If needed, mash the berries to enhance the jam-like consistency. Once done, let it cool.
Roll Out the Pastry
- On a floured surface, roll out the thawed puff pastry sheets into large rectangles.
Assemble the Filling
- Spread a generous layer of softened goat cheese on each pastry sheet, followed by dollops of the cooled blackberry jam.
Cut and Twist
- Using a sharp knife or pizza cutter, cut each sheet into 6 strips. Twist each strip to create spirals.
Add the Topping
- In a small bowl, combine fresh lemon zest, raw sugar, and minced thyme. Sprinkle this mixture on top of the twisted pastries.
Prepare for Baking
- Arrange the twisted pastries on a baking sheet lined with parchment paper. Brush each twist with the beaten egg wash.
Bake to Perfection
- Preheat your oven to 400°F (200°C) and bake the pastries for 16-18 minutes, or until they are golden brown.

Notes
