  • 2 cups fresh blackberries Juicy and vibrant for flavor.

  • 1 tablespoon lemon juice Adds brightness.
  • 3/4 cup granulated sugar Helps to thicken the jam.
For the Pastry
  • 2 sheets frozen puff pastry, thawed Flaky and buttery layers.
  • 8 ounces goat cheese, softened Creamy and tangy.
  • 2 lemons zested For added citrus flavor.
  • 4 teaspoons raw sugar For topping.
  • 2 teaspoons fresh thyme, minced Herbal notes to complement sweetness.
  • 1 large egg, beaten For egg wash.

Method
 

Prepare Your Jam
  1. In a medium saucepan over medium heat, combine fresh blackberries, water, lemon juice, and granulated sugar. Stir occasionally, allowing the mixture to cook for about 20-30 minutes until it thickens. If needed, mash the berries to enhance the jam-like consistency. Once done, let it cool.
Roll Out the Pastry
  1. On a floured surface, roll out the thawed puff pastry sheets into large rectangles.
Assemble the Filling
  1. Spread a generous layer of softened goat cheese on each pastry sheet, followed by dollops of the cooled blackberry jam.
Cut and Twist
  1. Using a sharp knife or pizza cutter, cut each sheet into 6 strips. Twist each strip to create spirals.
Add the Topping
  1. In a small bowl, combine fresh lemon zest, raw sugar, and minced thyme. Sprinkle this mixture on top of the twisted pastries.
Prepare for Baking
  1. Arrange the twisted pastries on a baking sheet lined with parchment paper. Brush each twist with the beaten egg wash.
Bake to Perfection
  1. Preheat your oven to 400°F (200°C) and bake the pastries for 16-18 minutes, or until they are golden brown.

Notes
