Preparation
  1. Preheat your oven to 300 degrees F (150 degrees C) and line a baking sheet with foil for easy cleanup.
  2. Rub the ribs with olive oil generously, ensuring an even coat.
  3. Sprinkle with smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper.
  4. Wrap the rubbed ribs tightly in foil to retain moisture during baking.
Cooking
  1. Place the wrapped ribs on the lined baking sheet, meat side up.
  2. Bake for 2.5 to 3 hours until they are tender and fragrant.
  3. Prepare the smoky honey glaze in a medium saucepan by combining ketchup, honey, soy sauce, brown sugar, apple cider vinegar, smoked paprika, garlic powder, onion powder, and optional chili flakes.
  4. Simmer the glaze for 10-15 minutes, stirring occasionally, until slightly thickened.
  5. After baking, carefully unwrap the ribs and brush generously with the prepared glaze.
  6. Increase the oven temperature to 400 degrees F (200 degrees C) or heat your grill.
  7. Return the glazed ribs to the oven or grill for another 10-15 minutes to allow the glaze to caramelize.
  8. Slice the ribs into servings and serve hot, drizzled with extra glaze.

Notes
