Ingredients
  

For the Salmon Bites
  • 1 lb fresh salmon, skinless and cut into bite-sized cubes Use the freshest salmon possible for best flavor.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup panko breadcrumbs For extra crispy texture, toast briefly in a pan.
  • 1 tbsp olive oil or cooking spray
For the Bang Bang Sauce
  • 1/2 cup mayonnaise Can be substituted with yogurt for a lighter sauce.
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha Adjust according to spice preference.
  • 1 tsp honey (optional)
  • Juice of 1/2 lime lime juice
For the Bowls
  • 2 cups cooked jasmine rice or cauliflower rice
  • 1 cup shredded purple cabbage
  • 1 piece avocado, sliced Use ripe avocado.
  • 1/2 cup shredded carrots
  • 2 green onions green onions, sliced For garnish.
  • 1 tbsp fresh cilantro For garnish.
  • 1 tbsp sesame seeds For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or your air fryer to 390°F (200°C).
  2. In a mixing bowl, gently toss the salmon cubes with the garlic powder, smoked paprika, salt, and black pepper.
  3. Press each salmon cube into panko breadcrumbs, ensuring they are thoroughly coated.
Cooking
  1. Arrange the salmon bites on a parchment-lined baking tray or place them in an air fryer.
  2. Bake for 12-14 minutes or air fry for 8-10 minutes, flipping halfway.
  3. While the salmon cooks, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and optional honey to create the Bang Bang sauce.
Assembly
  1. In serving bowls, layer jasmine rice or cauliflower rice, followed by shredded cabbage, sliced avocado, and carrots.
  2. Top with crispy salmon bites and drizzle with Bang Bang sauce.
  3. Garnish with green onions, cilantro, and sesame seeds.
  4. Serve immediately and enjoy!

Notes

Store leftovers in airtight containers for up to 2 days. For a healthier option, use cauliflower rice instead of jasmine rice. Consider using shrimp, chicken, or tofu as alternatives for protein.
