Ingredients
  

Taco Ingredients
  • 8-10 pieces medium tortillas (corn or flour)
  • 1/2 pound fresh salmon
  • 1 teaspoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon ground cumin
  • Salt & pepper to taste
Sauce and Toppings
  • 1 cup plain Greek yogurt
  • 1 tablespoon lime juice (or to taste)
  • 1 clove garlic (minced)
  • 1-2 tablespoons fresh cilantro (chopped, or to taste)
  • 1 avocado (diced)
  • Iceberg lettuce (shredded, to taste)
  • Lime wedges (to taste)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Move the rack to the middle position.
  2. Line a baking sheet with foil.
  3. Place the salmon on the baking sheet and coat with olive oil.
  4. Sprinkle the salmon with garlic powder, chili powder, ground cumin, and salt & pepper.
Cooking
  1. Bake for 10-15 minutes or until the salmon flakes easily with a fork.
  2. While the fish is baking, combine Greek yogurt, lime juice, minced garlic, cilantro, and seasoning for the sauce.
Assembly
  1. Prepare the avocado and lettuce.
  2. Once the salmon is cooked, cut it into bite-size pieces.
  3. Assemble tacos by layering salmon, sauce, avocado, and lettuce on warm tortillas.
  4. Serve with lime wedges.

Notes

Serve these tacos with a side salad or roasted vegetables. For a lighter option, replace tortillas with lettuce wraps.
