- Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or giving it a light grease.
- Cut the scrubbed potatoes into wedges, aiming for uniform sizes to ensure they cook evenly.
- In a large bowl, toss those potato wedges with olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper until they’re beautifully coated.
- Lay the seasoned wedges in a single layer on your prepared baking sheet, making sure they're not overlapping.
- Bake in the oven for 25-30 minutes, giving them a flip halfway through, until they’re perfectly golden brown and crispy around the edges.
- Once they’re out of the oven, sprinkle the hot wedges with grated Parmesan cheese and allow the heat to melt it.
- If desired, sprinkle the baked wedges with freshly chopped parsley for garnish.
- Serve hot with your favorite dipping sauce like ketchup, ranch, or garlic aioli.
Notes
For extra crispiness, let the wedges soak in cold water for 30 minutes before baking. You can also add cayenne pepper for spice or use pre-cut frozen wedges for quicker preparation.
