- Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Layer fresh spinach at the bottom of the baking dish.
- Scatter the halved cherry tomatoes over the spinach.
- Crumble feta cheese over the vegetables.
- Crack the eggs evenly over the spinach and feta mixture.
- Drizzle olive oil on top and season with salt and pepper.
Baking
- Bake for 20-25 minutes, until the eggs are set but slightly runny in the middle.
- Serve immediately.
Notes
Consider adding diced bell peppers or olives for a Mediterranean twist. If you want to add a little kick, sprinkle some red pepper flakes before baking. Allow the dish to rest for a few minutes after baking for easier serving.
