Seasoning and Oil

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Layer fresh spinach at the bottom of the baking dish.
  3. Scatter the halved cherry tomatoes over the spinach.
  4. Crumble feta cheese over the vegetables.
  5. Crack the eggs evenly over the spinach and feta mixture.
  6. Drizzle olive oil on top and season with salt and pepper.
Baking
  1. Bake for 20-25 minutes, until the eggs are set but slightly runny in the middle.
  2. Serve immediately.

Notes

Consider adding diced bell peppers or olives for a Mediterranean twist. If you want to add a little kick, sprinkle some red pepper flakes before baking. Allow the dish to rest for a few minutes after baking for easier serving.
