  • 2 tablespoons chopped fresh chives or parsley For garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Lightly grease a 9-inch shallow baking dish with 1 tablespoon of olive oil.
  2. In a medium bowl, whisk together the eggs, milk, and minced garlic until uniform and frothy.
Mixing
  1. Gently fold in the crumbled feta cheese and lemon zest, and add the black pepper and sea salt.
  2. Drizzle in the remaining tablespoon of olive oil and stir gently.
Baking
  1. Pour the mixture into the greased dish, spreading it out to about 1 inch thick.
  2. Bake for 15–18 minutes or until the edges are set and the center jiggles slightly.
Finishing Touches
  1. Let the dish rest for about 3-4 minutes to allow the eggs to set fully.
  2. Sprinkle with chopped chives or parsley before serving.
Serving
  1. Serve immediately with crusty bread or a light side salad.

Notes

For added flavor, try adding sun-dried tomatoes or olives. To make dairy-free, substitute with plant-based cheese and almond or oat milk.
