Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine ground chicken, ricotta, Parmesan, spinach, breadcrumbs, egg, garlic, and seasonings. Mix gently until just combined.
  4. Scoop mixture into 1.5-inch balls and arrange on the prepared baking sheet.
Cooking
  1. Bake for 20–22 minutes or until golden and cooked through, reaching an internal temperature of 165°F (74°C).
  2. Warm marinara in a skillet, then toss baked meatballs in the sauce until coated.
  3. Sprinkle with extra Parmesan before serving.

Notes

Don't overwork the mixture to prevent tough meatballs. Consider adding fresh herbs for vibrant flavor. Use ground turkey for a lighter option. For a spicy kick, add red pepper flakes.
