Method
 

Preparation of Apples
  1. In a medium mixing bowl, combine the diced apples, 2 tablespoons of granulated sugar, ground cinnamon, ground nutmeg, and lemon juice. Toss gently to ensure the apple pieces are evenly coated with the mixture.
  2. Let this sit while you prepare the batter, allowing flavors to meld.
Making the Batter
  1. In a large mixing bowl, whisk together the flour, 2 tablespoons of sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry mixture, stirring just until combined. Gently fold in the diced apple mixture.
Frying the Fritters
  1. In a deep skillet, heat the oil to 350°F (175°C).
  2. Carefully drop spoonfuls of batter into the hot oil. Fry the fritters in batches for 2-3 minutes on each side until golden brown.
  3. Drain the fritters on paper towels to remove excess oil.
Making the Glaze
  1. In a medium bowl, whisk together the powdered sugar, milk (or apple cider), and 1/2 teaspoon of vanilla extract until smooth.
