  • 1 large red onion, cut into chunks sweet and caramelized when grilled
  • 1 large red bell pepper, cut into chunks sweet and vibrant
  • 1 large green bell pepper, cut into chunks offering a fresh crunch
  • Wooden skewers soaked in water for 30 minutes to prevent burning

Preparation
  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper to create a flavorful marinade.
  2. Add the chicken chunks to the marinade, tossing to coat them thoroughly. Cover the bowl and refrigerate for at least 1 hour, or overnight for deeper flavor.
  3. While the chicken marinates, preheat your grill to medium-high heat.
Grilling
  1. Thread the marinated chicken onto soaked wooden skewers, alternating with chunks of red onion and bell peppers.
  2. Grill the skewers for 8 to 10 minutes, turning occasionally until the chicken is cooked through and the vegetables are tender.
Serving
  1. Serve your grilled chicken souvlaki hot, accompanied by a side of creamy tzatziki sauce for dipping.

Notes

Prep ahead by marinating the chicken the night before to enhance flavors. Consider adding cherry tomatoes or zucchini for extra color and nutrition. If you don’t have a grill, broil the souvlaki in your oven.
