  • 1 large store-bought flatbread (about 8 oz)
For the toppings
  • 1 cup fresh asparagus, trimmed and cut into bite-sized pieces
  • 1 cup whole-milk ricotta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp zest of 1 lemon

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the asparagus thoroughly, remove the tough ends, and chop it into bite-sized pieces.
  3. In a mixing bowl, combine the ricotta cheese with lemon zest, salt, and pepper. Blend until smooth.
  4. Spread the ricotta mixture over the prepared flatbread.
  5. Scatter the chopped asparagus pieces evenly over the ricotta layer.
  6. Drizzle extra virgin olive oil over the toppings.
  7. Bake for 15–20 minutes, or until the edges are golden brown and crispy.

Notes

Experiment with different herbs such as fresh basil or thyme, and consider adding a sprinkle of red pepper flakes or grated Parmesan for extra flavor. This recipe can be customized based on your tastes.
