Preparation
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whip the egg whites until they reach soft peaks.
  3. In another bowl, combine almond flour and granulated sugar, ensuring there are no lumps.
  4. Gently fold the whipped egg whites into the dry mixture with a spatula.
  5. Drop dollops of the mixture onto your prepared baking sheet, spacing evenly apart.
Baking
  1. Slide your baking sheet into the preheated oven and bake for about 12-15 minutes, or until lightly golden around the edges.

Notes

These cookies freeze beautifully. Store in an airtight container. Reheat at 300°F (150°C) for 5-10 minutes to enjoy warm cookies again.
