  • 12.8 oz box rice or corn Chex cereal
  • 3 cups assorted nuts (pecans, almonds, or peanuts) Use your favorite nuts
  • 3 cups pretzel thins or mini pretzels
Toffee Coating
  • 1 cup unsalted butter For a rich, creamy flavor
  • 2 cups dark brown sugar Adds deep caramel texture
  • 3/4 cup light corn syrup Provides binding sweetness
  • 1 teaspoon salt Balances flavors
  • 2 teaspoons pure vanilla extract For a delightful aroma
  • 1 teaspoon baking soda Helps create perfect toffee texture

Method
 

Preparation
  1. Preheat the oven to 250°F (120°C) and line two baking sheets with foil, lightly coating them with nonstick cooking spray.
  2. In a large mixing bowl, gently combine the Chex cereal, assorted nuts, and pretzels, mixing until evenly distributed.
Toffee Preparation
  1. In a medium saucepan over medium heat, melt the butter while stirring constantly.
  2. Gradually add the dark brown sugar, light corn syrup, and salt, bringing to a rolling boil for 2 minutes.
  3. Remove from heat and stir in the vanilla extract and baking soda.
  4. Carefully pour the toffee over the cereal blend and gently fold it in.
Baking
  1. Spread the coated mixture evenly on the prepared baking sheets and bake for 30 to 55 minutes, stirring every 15 minutes.
  2. Once finished, allow to cool completely on the sheets before breaking into clusters.

Notes

Consider adding a pinch of cinnamon or a dash of nutmeg for an extra flavor boost. You can also add chocolate chips or M&Ms just after baking.
