Preparation
- Preheat your oven to 325°F (165°C).
- Grease and flour a 10-inch bundt pan thoroughly.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 5-7 minutes.
- Add the eggs one at a time, beating thoroughly after each addition.
- Gradually add the flour to the creamed mixture, mixing on low speed until just blended.
- Gently stir in the lemon extract and 7 Up soda until the batter is smooth and slightly fluffy.
- Pour the batter into the prepared bundt pan, spreading it evenly.
Baking
- Bake for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven and let the cake cool in the pan for about 10 minutes.
- Carefully invert the cake onto a wire rack to cool completely.
