Preparation
  1. In a mixing bowl, combine the eggs, milk, salt, and black pepper. Whisk until fully blended.
  2. Heat a nonstick skillet over medium-high heat and pour in the egg mixture. Stir briskly to scramble the eggs, cooking for about 1 minute until set but still fluffy.
  3. Warm the tortillas in the microwave for 10 to 15 seconds or in a dry skillet until pliable.
  4. Divide the scrambled eggs between the tortillas. Sprinkle shredded cheddar cheese over the eggs.
  5. Top each taco with diced tomatoes, fresh cilantro, and salsa. Optionally, add a dollop of sour cream.

Notes

To ensure fluffy eggs, whisk them thoroughly before cooking. For a healthier version, consider using whole wheat tortillas or low-fat cheese. Feel free to add options like sautéed bell peppers or avocados for added flavor.
